    ≪Takashimaya Takashimaya Specialty≫
    【All Year】
    ・Simmered local fish
By continuously adding to the secret broth over many years, every time you cook it,
The rich, complex flavor comes from the fat and savory taste of the fish melting into the broth.
To allow you to enjoy the deliciousness of each part, we cook the whole fish.
We carefully remove the scales from each fish, taking our time to do so that you can even eat the meat on their cheeks.

・Pickled firefly squid and young Japanese flying squid (young Japanese flying squid)
The eyes, mouth, and even the bones have been carefully removed, so you can enjoy both the texture and the delicious flavor of the intestines.

    ・Spicy sweet shrimp
This popular delicacy involves separating the sweet shrimp into its body and shrimp paste, then salting only the peeled shrimp before coating it with the shrimp paste.

    【May to August】
    ・Rock Oyster Coquille
Prepare the broth from chicken thighs,
This exquisite dish features sautéed rock oysters encased in a smooth and rich béchamel sauce made from pureed vegetables, then baked in the oven to lock in their delicious flavor.
